Upma, a savoury “porridge” of toasted semolina (rava) with vegetables and spices — a classic Indian breakfast.
Ingredients
- 1 tomato, 1 onion, 1 carrot, 1 potato
- 5–6 green beans, peas
- a handful of dal
- 1 green chilli, curry leaves, fresh coriander
- 250 g roasted rava
- sunflower (vanaspati) oil
Preparation
- Dice the vegetables small.
- Put onion, carrot, beans, potato and peas in a pan of cold water, bring to the boil and cook about 10 minutes (half-cooked).
- In a pan, toast the rava without fat.
- In another pan, heat the oil and add, in order: mustard seeds, curry leaves, dal, onion, chilli, tomato, the cooked vegetables, 3 cups water.
- Boil 5 minutes, rain in the rava while stirring constantly, then the coriander. Cook at a rolling boil, add a drizzle of vanaspati oil and salt.
You get a kind of vegetable porridge.
