Idli (for 12 idlis)

Idli are the soft, steamed rice-and-lentil cakes of South India — a light, classic breakfast. The quickest way uses a ready-made batter.

Ingredients

  • ready-made idli/dosa batter
  • a little water
  • (an idli steamer with moulds)

Preparation

  1. Buy ready-made idli/dosa batter. Put it in a bowl and thin it with a little water to a thick, pourable consistency.
  2. Grease the idli moulds and pour in the batter.
  3. Steam in the idli pot for about 10 minutes, until the idlis are risen and set. Serve hot with coconut chutney and sambar.
